In addition to a lot of delicious and calming beef and chicken breast creations with the kind permission of mom, I was grew up on a reasonable amount of box -Mac and cheese. In fact, the Blue Box is the first “recipe” that I remember that it was made from scratch. The “yellow box” demanded special occasions. When I discovered the joy that were Velveeta mussels and cheese, I never looked back. (When I was 10, I was probably 10% Mac myself!)
Although I had trusted myself in the half-Homemade mac and cheese room at a young age, I had not met a Mac of the baked variety until my 20s. When I was familiar with the concept, I quickly understood the attraction. What is not to love about a pasta casserole that tastes of Mac and cheese from my childhood and still offers even more structural contrast?
I can still open the Herd -Macs on autopilot, but I haven't completely mastered my Signature Baked Mac recipe. When I heard John Legend about his favorite recipe for macaroni and cheese in a recent episode of the kitchen podcast of her mums from the backweight, I knew that I had to try it.
How to make John Legends Mac and Cheese
The legend shares his characteristic recipe about the kitchen of her mother and the desire of Chrissy Tiegen, where the woman says of Legend: “I still like my creamy version better, but I come to Johnny's casserole-style mac 'n' cheese, which is not necessary to make a separate sauce, and May-Aren, no way.
Although her mom's kitchen focuses on family memories for families, the singer, songwriter and producer admitted to the host Michele Norris that this is his reef at his mother's court. The mother of Legend made her Mac with diced green paprika pods that were mixed into the cheesy pasta, and then she put down things with crumbled Ritz cracks.
The instructions below guide you through the production of John's version he says “more old school; like a soul food restaurant,” he says.
- Prepare the pasta. Boil macaroni in salted water until the pasta are al dente. Drain the noodles, put them back in the pot (from the heat) and then throw them with butter until the macaroni is evenly covered with melted butter.
- Stir the sauce together and combine the cheese. Whisk the milk, whole milk, eggs, seasoned salt, garlic powder, salt and black pepper in a bowl in a bowl. Mix extra hot cheddar cheese and grated Monterey jack cheese in a second bowl.
- Lay it up. Place a third of the butter-like macaroni in the bottom of a greased 9-X-13-in-inch base form in an even layer. Top evenly with a third of the cheese mix. Repeat two layers. Pour the milk mixture evenly and then sprinkle it with peppers.
- Bake until golden brown. Bake for 40 to 45 minutes or until the top is light brown. Leave the dish standing for 10 to 15 minutes before serving.
What makes this recipe for macaroni and cheese something special?
Cook the pasta and throw with butter? This is a step that I know from my Box -Mac days well. From there, the legend (and his mother) revise the script with a new strategy.
Instead of adding the cheese to the milk mixture to produce a cheese sauce, this Mac and cheese recipe requires the pasta and cheese lasagna-like to overshift, and then everything in the seasoned milk mix. Another less communication feature of this formula: vaporizing milk. It makes up more than 85% of the milk mix. (Full milk fills the gaps.) Compared to a Mac and cheese that was made solely from whole milk, the texture feels wasteful.
While the cheese melts and the milk is in the pasta, the casserole becomes a tired festival of cheese and carbohydrates. The careful processing of the ingredient list this recipe only requires a few spices and zero-mix-ins enables the cheese taste to step into the spotlight.

Tips for making baked Mac and cheese
If you are tried to try this baked recipe for Mac and cheese, you will find a few tips from our test kitchen here:
- Do not confuse evaporated and condensed milk. Both come in doses that look quite similar and are often sold next to each other in the baking. However, if you use a vaporizing milk (which is exactly what it sounds like: milk that is cooked until the liquid is reduced by 60%), not condensed milk (which is the same, but with added sugar). If you do not find any at hand or do not have at hand, the best evaporating milk replacement products include whole milk, 2% milk, half and a half or heavy cream. One of the above work as one-to-one swap.
- Try a different noodle shape. Ellbogen are traditional, but the chefs we spoke to agree that they are far from their only option for cheesy pasta dishes. Consider exchanging for one of our other best pasta forms for Mac and cheese if you want: Cavatappi, Orecchiette and bowls would also be spectacular here.
- Vary your cheese – and rub it yourself. Cheddar and Monterey Jack are great teammates, but there are many options when it comes to Fromage. Consider Gouda for a smoky note, Gruyère for even more NUS and HAVARTI for a butter quality or Asiago for a bold backbone. Regardless of which cheese you choose, rub it yourself instead of buying pre -driven cheese for optimal extensability.
- Doctor it as desired. Not everyone is a purist and the mother of Legend proves that it is okay to hand over the script. In order to make this casserole your own, you should add crumbled crispy bacon, caramelized onions or over any pasta layer. You can also cover with crumbled crackers or sandwich crumbs.
- Try not to hurry up the rest step. Wait at least 10 minutes after removing the dish from the oven before scooping a portion. If you try to eat this from the oven immediately after the court, you will be disappointed – it will be a soup.
The judgment on John Legend's Mac and KäserSeCept
If you like the heads of classic Mac and cheese that you could order in a soul food or meat and three restaurants, the recipe for the family height of John Legend is satisfied in your own home … until you can pull up and order again.
You could feel that this Mac and cheese recipe is a little simple when lobster-occupied or crumbled Taki-Top-Mac and cheese are your jam. But I found the simplicity a capital. The thoughtful list of ingredients not only makes it easy to carry out (and memorize it!), Also you can really taste the sharp, nutty qualities of the Cheddar and Monterey jack cheese. It is like a singer who, in a way makes a capella.
This is not the recipe for you if you are in a hurry to eat on the table. It takes a little more than an hour, then it is important to wait another 10 to 15 minutes before you dive. But patience is a virtue. Most of the time is hand-off, and after they had the baked Mac and cheese rest a few love songs, they are spoiled with cheeses in abundance and an interior-like consistency, which is lush and almost pudding-like, thanks to the concentrated nature of evaporative milk.
Now that I mention this soundtrack, add a salad and open a bottle of crew and use a John Legend album, and you have the creation of a rather spectacular appointment!
